Cake of the Week: But I’m From Chelsea! Loaf

Chelsea Loaf Bread filled with Poppyseeds, Hazelnuts + Rye Soaked Apricot and Blackcurrant

A look inside! You know a Chelsea bun from its dried currants and sweet spices! A Chelsea loaf is like a Chelsea bun – but this yeasted dough is rolled out and spread with buttery poppyseed, hazelnut and rye-soaked fruit. It is sliced widthwise, then lengthwise, then twisted and allowed to rise in a loaf pan. The result is ribbons of filling running throughout the centre of the bread and a caramelized fruity topping. A hot sugar glaze is brushed over the loaf while hot from the oven.
